Bergamot (Citrus Bergamia) belongs to the Rutaceae family, originally from Persia and between 4 and 5 m tall. The trunk is smooth, the branches are numerous and the crown is open. The leaves are alternate, oval, perennial, serrated, hard and glossy. The flowers are white, small and fragrant. The fruit has a spherical shape and greenish pulp, divided into segments and with a sweet and sour taste. The peel is smooth and yellow and, similarly to that of oranges, it contains vesicles filled with essential oils which are highly appreciated for the preparation of perfumes.
