From the sprouting of the fruit the "wild" plant is born which would produce small sized chestnuts, for this reason after 6 to 10 years when the diameter of the trunk reaches 10 cm we proceed to grafting with scions obtained from chestnut plants. Grafting is an operation which consists in welding, i.e. making a part of the other plant called nesto grow on top of a plant, called rootstock or wild. The first phase of the grafting takes place in the months of February - March and consists in the collection of the material from which the scions (portion of branch) will be obtained, choosing among the healthiest and most vigorous chestnut trees that produce good-sized fruits.
